Paneer lababdar is a rich and authentic Punjabi curry that
can be found across North India. Soft and succulent Cottage Cheese cubes dunked
in this creamy Onion and Tomato based gravy, makes this dish worth indulging
in.
Lababdar, this word means a
strong desire for something and a complete surrender when you get it! And when we use it along with
the word Paneer (Cottage Cheese), it simply means a complete surrender to one’s
tastebuds to this dish ‘Paneer Lababdar’.
My today’s recipe Paneer Lababdar is
Restaurant Style dish which is aromatic, sweet and slightly spicy. So here goes
the recipe:
Ingredients:
Onions – 2 (Roughly chopped)
Tomatoes – 2(Roughly chopped)
Ginger Garlic Paste – 2 tsp
Paneer/Cottage Cheese – 200 gms
Yogurt – 1 tsp
Coriander Powder (Dhaniya Powder) - 1 tsp
Turmeric Powder (Haldi) - 1 tsp
Red Chilli Powder - 1/2 tsp
Roasted Cumin Powder (Bhuna Jeera) - 1
tsp
Kasuri Methi (Dried Fenugreek Leaves) – 1
tsp
Cloves – 2/3
Salt - As per taste
Oil – 4 tsp
Water
Procedure:
1. The
first step is to marinate the Paneer. Cut the Paneer into square cubes. Leave 2
cubes and marinate the rest by adding Yogurt, Coriander Powder, Turmeric
Powder, Red Chilli Powder, Roasted Cumin Powder & Salt. Mix is with a very
light hand so that the Paneer cubes don’t break. Leave it aside for 15 minutes.
2. Now
for the curry, add oil in a pan. Once heated add onions and roast them well
till they turn golden brown. Now add ginger garlic paste & chopped
tomatoes. Let the mixture roast well, till the water from tomatoes disappears.
Now switch off the gas & let it cool down.
3. Now
coarsely grind the mixture in a mixer grinder – not like a smooth curry, but a
little coarse texture.
4. Add
the mixture back to the pan and let it simmer. Add some water, turmeric powder
& salt and let the curry come to a boil.
5. Now
add the marinated paneer into the curry and mix well. Grate some fresh paneer
into the dish which you had kept aside. Add dried fenugreek leaves and let the
curry come to a boil.
6. Garnish
with grated Paneer on the top!
Paneer
Lababdar goes very well with Indian breads like Butter & Garlic Naan, Laccha
Parantha or plain roti. I love mine with Laccha Parantha.
