Spaghetti Aglio Olio with Mushrooms

Spaghetti Aglio Olio Pasta has its roots in Naples, Italy. It is made from flour and water and formed into solid strings.Spaghetti is a dietary source of vitamins, minerals and fiber, especially the whole wheat pasta.It is also a home of Vitamin Bs, Iron & Magnesium.



If you want to eat healthy, without straining your organism with heavy food, pasta is your solution. 

Here's my simple recipe for Spaghetti Alio Olio with Mushrooms, a recipe which even my little one enjoys eating!

Ingredients:

Spaghetti: 1 Packet Uncooked
Garlic cloves: 9, finely chopped
Button Mushrooms: 250 grams, thinly sliced
Canola/Olive Oil: 1 tablespoon
Flour: 1 teaspoon
Milk: 1 cup
Fresh Coriander: 1/4th cup chopped
Oregano: As per taste
Black Pepper: As per taste
Salt: As per taste
Parmesan Cheese: 1/4th cup chopped

Procedure:
1. Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and transfer to a pasta bowl.

2. Boil the mushrooms in a separate pan till they become soft.

3. In a non-stick pan, combine the oil & chopped garlic and slowly roast the garlic over medium heat.

4. Add flour and roast for another 2-3 minutes, till it becomes light brown in colour.

5. Add milk & cook the same for another 2 minutes till you get a thick sauce.

6. Add salt, oregano & black pepper followed by boiled mushrooms to the sauce.

7. Add coriander & half the cheese to get a lovely white paste sauce.


8. Add pasta to the pan & stir until combined.

9. Top it with the remaining Parmesan cheese.
