Meethe Chawal - A traditional Punjabi Dessert!

This dish is usually enjoyed during festivals like Basant panchami, served on auspicious occasions like marriage, first anniversary, first birthday, first milestones of a child and also for religious functions.

Long grained, highly aromatic Basmati rice and sugar syrup are the key ingredients of this dish. A saffron colored dish, it is usually served flavored with cardamoms, cloves, cinnamon and kesar. Dry fruits like pistachios, almonds, walnuts, cashews & raisins are added to enhance the flavor of this awesome recipe. 

I remember this as one of the most loved dishes of our household when I was a child. I still love this as much!

Here's Meethe Chawal - Sweet Saffron Rice for you!



Ingredients:

Basmati Rice (soaked & washed): 2 cups
Cumin Seeds (Jeera) : 1 tsp
Fennel Seeds (Saunf) : 1 tsp
Cloves : 7
Green Cardamom : 4
Black Cardamom : 1
Cinnamon stick : 1
Kesar : A Pinch (mixed with 2 spoons water)
Sugar : 2 cups
Water : 4 cups
Desi Ghee : 3 table spoons
Yellow Color : 1/4th spoon
Dry fruits (Soaked in water & chopped) : Almonds, Pistachios, Walnuts, Cashews & Raisins

Procedure:

1. In a pressure cooker, add the ghee followed by cumin and fennel seeds.

2. Once they start to pop, add the rice along with 2 cups of water. 

3. Now add the cardamoms, cinnamon, cloves & kesar water to the rice. Add color & let the rice boil.

4. Simmer the gas once the water starts boiling & let the rice cook.

5. Meanwhile, in a separate pan, heat 2 cups of water with the sugar to make a sugary syrup.

6. Once the water starts to evaporate from the rice, add the sugary syrup.

7. Also add the dry fruits & let the rice cook on simmer.

8. Once the entire water evaporates, close the lid of the cooker to build the steam. 

9. Switch the gas off once the steam starts building & let it sit for 5-10 minutes till the steam vanishes.
