Healthy Butter Chicken

Butter Chicken is probably the most popular Indian dish liked by all for its awesome flavor & deliciously rich gravy. A good Butter chicken dish with Garlic Naan or Pudina Parantha is my all time favorite comfort food. However for some, if they really love butter chicken but steer clear thanks to its calorie content, this recipe is for you! It is not 'rich' but is yummy and quick to make. It has all the flavors that both your taste-buds, and waistline will love :-).

It is my family's favorite recipe where they get flavors of butter chicken, without any butter! So enjoy!



Ingredients:

Chicken - 400gm
Onions - 3 big
Tomatoes - 3 big
Ginger - A small piece
Garlic - 4-5 kernels
Cinnamon sticks - 2
Cloves/ Laung - 3
Big Cardamon - 1
Dried Fenugreek Leaves/ Kasuri Methi - 1 tsp
Cumin seeds - roasted & powdered 1 tsp
Salt - as per taste
Black pepper - as per taste
Milk - 1/4th cup
Fresh Cream - 1 small tsp - for garnish
Coriander leaves - for garnish
Canola Oil - 1 tablespoon
Water

Recipe:
1. Wash the chicken well & put in a pressure cooker with half cup water, salt & 2 kernels of garlic. 
2. Simmer after one full whistle & let it cook for 4-5 minutes before switching off the gas.
3. In a separate pan, add oil followed by roughly chopped ginger, garlic, onion.
4. Once the rawness of these goes away and onion becomes translucent, add roughly chopped tomatoes & let it cook.
5. Once cooked, put this mixture in a mixer & blend well to make a puree.
6. Transfer the puree back to the same pan & add Cinnamon sticks, cloves & cardamom. Let it cook for 2-3 minutes.
7. Add the boiled chicken, along with the chicken stock to the puree. Add salt, cumin seed powder & black pepper. Mix them well & close the lid of the pan. Let it cook on simmer for 2-3 minutes. 
8. Add milk & continue to cook on simmer with closed lid for 2-3 minutes. , You will now be able to see the nice orange color of the butter chicken :-).
9. Add dried Fenugreek Leaves/ Kasuri Methi & continue cooking for 5 minutes.
10. Garnish with Coriander & fresh cream and serve.

You can add red pepper powder or green chilies if you want to make it more spicy! 

Butter chicken is best enjoyed with Roti, Naan, Parantha or even Jeera Rice!
