Upside down Pineapple Cranberry Cake

Who loves pineapple? And specially when it’s in a cake - yum! 

Aside from the interesting appearance of this fruit, it’s storehouse of health and medicinal benefits which include their ability to improve respiratory health, cure coughs and colds, improve digestion, help you lose weight, strengthen bones, improve oral health, boost eye health, reduce inflammation, prevent cancer, increase heart health, fight off infections and parasites, improve the immune system, and increase circulation.

Cranberry is a very good source of Vitamins C, K, E, manganese, copper and pantothenic acid. It lowers the risk of Urinary Tract Infections (UTI), prevents certain types of cancer and improves immunity. 

At my home, we have many pineapple lovers! A classic pineapple cake makes a fun center piece for evening tea and is quite a conversation starter :-). I love baking & have many fans in my family! And when it’s the fresh out of oven upside down Pineapple Cranberry cake – the ‘yums’ increase. Oh, I love hearing it!

Upside Down Pineapple Cranberry Cake


Ingredients: 

(The measuring cup is the standard mini bowl size)

All purpose flour (Maida) :  1.5 measuring cups
Oats flour : 1/2 measuring cup
Granulated Sugar : 1 measuring cup
Canola Oil/ Unsalted butter : 1 measuring cup
Eggs : 4
Baking Powder : 1 big teaspoon
Milk : 1/2 cup
Pineapple slices : 7 (I used Delmonte's canned slices, you can replace with pineapple slices)
Cranberries : A handful

Procedure:
1. Preheat the oven for 2 minutes
2. Mix all the All Purpose Flour, Oats flour & Baking Powder together
3. Beat the eggs till they are a fluffy. Add a small teaspoon of Pineapple syrup (I used the canned syrup)
4. Mix the sugar & oil/butter well till it is smooth
5. In a big bowl, add the dry ingredients, then pour the sugar-oil mixture & finally add the eggs.
6. Add milk to create a smooth batter
7. Grease the baking dish well with oil & sprinkle some granulated sugar on the same
8. Place 6 Pineapple slices & pop-in the cranberries 
9. Cut the remaining pineapple slice into small pieces
10. Pour half the batter over the dish & sprinkle the cut pineapple pieces & cranberries on the batter
11. Pour the rest of the batter in the dish
12. Bake it on 180 deg Celsius for 40 minutes
13. Leave to stand for 5 minutes, then turn out onto a plate

The Upside down Pineapple Cranberry cake is ready. Serve warm & enjoy!
