Spice Rubbed chicken with Couscous

What a week it was! Full of kitchen experiments ☺

Now that we are focusing on healthy food, our recipe today will be one healthy, nutritious & wholesome dish. Sharing my take on the Spice rubbed chicken with Couscous!



Ingredients:

Chicken breasts - cut into small pieces 500gm
Couscous - 250 gm
Garlic - 5 cloves finely chopped
Spinach leaves - 15-16
Oregano - 1tsp
Black pepper - 1tsp
Salt - as per taste
Lemon juice - 1 lemon
Olive oil 
Almonds - 4-5

Recipe:


1. Sprinkle the chicken with oregano; season with salt & pepper. Coat well so that the seasoning is on all sides of chicken. Let it settle for 1/2 hour.


2. Blanch the almonds & finely chop them. Keep them aside for later use.


3. In a small pan, heat 2tsp olive oil over medium heat. Add couscous and roast the same for 1-2 minutes till it is lightly roasted. Make sure to stir it continously so that it does not get stuck to the pan.


4. Add 2 cups water & chopped garlic to the couscous. Add salt & pepper as per taste and bring it to boil. Cover the lid of the pan when it boils and reduce the heat to low. Cook until the liquid is almost absorbed which should take around 5-6 minutes.


5. Add spinach leaves and cook until couscous is tender, around a minute. 


6. Add the chopped almonds and set aside.


7. In a small skillet, heat 2 tsp olive oil over medium heat. Add the chicken pieces and cook until opaque throughout - around 6-8mins per side.


8. For serving, place the couscous and top it with chicken. 


9. Sprinkle the lemon juice & oregano as per your preference.


The dish is an easy one & very healthy. It is a quick fix meal which makes up for a lazy weekend. Enjoy☺
