Chocolate Walnut Oats Cake

While June is known to be the 'rains' season, it was a surprise to see a pleasant weather last week. The weather called for some baking☺

For a foodie like me, calories have never been an issue, but with everyone looking at guilt free options, I thought why not!  So the hero of my recipe is oats which I use instead of all purpose flour(Maida).

Now with the recipe of my Chocolate Walnut Oats cake 🎂


Ingredients:
Oats (powdered in a grinder) - 1 cup
Castor Sugar - 1/2 cup
Unsalted Butter/Canola Oil - 1/2 cup
Eggs - 2
Baking powder - 1 tsp
Cocoa powder - 3 tsp
Vanilla extract - 1tsp
Milk - 1/2 cup
Walnuts - as per requirement


Procedure:
1. Mix oats flour, baking powder & cocoa powder together in a bowl. Alternatively you can sieve the same to get better integration.

2. Whisk the eggs till they become fluffy & add vanilla extract. Adding the extract at this stage will take out the smell of the eggs.

3. Mix the unsalted butter/canola oil with sugar finely & make sure no lumos are formed.

4. Add the oil-sugar mix into the dry ingredients and mix well. Now add the eggs into the mix & whisk the entire batter.

5. Finally add milk into the batter to make it smooth.

6. Preheat the microwave on convection mode at 180 deg for 2-3 minutes.

7. Grease the baking dish with oil so that the cake can come out easily later.

8. Pour the cake batter into the baking dish till half & add the chopped walnuts.

9. Now add the remaining batter and top it with a layer of walnuts again.

10. Bake the cake at 180 deg for 35-40 minutes.

11. Insert a toothpick/ knitting needle/ knife to check whether the cake is completely done or not. If it comes out clean, the cake is ready.

12. Allow the cake to cool down for some time so that it can come out easily from the baking dish.

13. Sprinkle some icing sugar on the cake through a sieve.

Enjoy the cake with a hot cuppa tea/ coffee. I like mine a little heated with vanilla ice cream.
