Upside down Pineapple Cranberry Cake

Who loves pineapple? And specially when it’s in a cake - yum!  Aside from the interesting appearance of this fruit,  it’s storehouse of health and medicinal benefits which include their ability to improve respiratory health, cure coughs and colds, improve digestion, help you lose weight, strengthen bones, improve oral health, boost eye health, reduce inflammation, prevent cancer, increase heart health, fight off infections and parasites, improve the immune system, and increase circulation. Cranberry is a very good source of Vitamins C, K, E, manganese, copper and pantothenic acid. It lowers the risk of Urinary Tract Infections (UTI), prevents certain types of cancer and improves immunity.  At my home, we have many pineapple lovers! Ginger Garlic Tofu

Tofu - An excellent source of Amino Acids, iron, calcium & other micro - nutrients is a versatile ingredient with many health benefits. Neutral tasting Tofu is known for readily absorbing flavor from other ingredients. It adapts to any flavor profile and works in variety of cooking methods. Tofu, or bean curd, is derived by curdling fresh soya milk. So, undoubtedly, today's recipe is made out of Tofu - A healthy protein-rich ingredient. We are making it Chinese style - but without any Soy sauce, vinegar or MSG. Ginger Garlic Tofu Ingredients: Tofu: 200 gm, cut into small square pieces Onion: 1big, diced into small squares Tomato: Finely grated Ginger: 1 small chunk, finely grated Garlic: 5-6 cloves, finely grated Capsicum: 1, diced into small square pieces Zucchini: 1,  diced into small square pieces Baby Corn: 5-6 cobs, cut into small pieces Salt: As per taste Black Pepper: As per taste Sugar: 1 small teaspoon Corn Flour: 1/2 small teaspoon Vegeta

Okay, so welcome to my food blog - Food & more, where you'll find me cooking up a storm. The recipes I share will range from fun & un-fussy to a little more involved, but ultimately, they are all delicious. Not only the recipes, but interesting anecdotes will add more spice, thus qualifying the 'more' aspect of the blog. I'm most inspired by the things I eat out of the home and some healthy stuff that I want my little one to eat. Being fussy eaters that children are, my recipes aim at making boring - fun! I love all food, so it'd be hard for me to choose a favorite, but I have a soft spot for all baked goodies - especially cakes, muffins & cookies. But this definitely doesn't mean I forget my husband's love for authentic north Indian food & thus, my experiments with the cuisine. Biryani, chicken curry, anyone?
