Spice Rubbed chicken with Couscous

What a week it was! Full of kitchen experiments ☺ Now that we are focusing on healthy food, our recipe today will be one healthy, nutritious & wholesome dish. Sharing my take on the Spice rubbed chicken with Couscous! Ingredients: Chicken breasts - cut into small pieces 500gm Couscous - 250 gm Garlic - 5 cloves finely chopped Spinach leaves - 15-16 Oregano - 1tsp Black pepper - 1tsp Salt - as per taste Lemon juice - 1 lemon Olive oil  Almonds - 4-5 Recipe: 1. Sprinkle the chicken with oregano; season with salt & pepper. Coat well so that the seasoning is on all sides of chicken. Let it settle for 1/2 hour. 2. Blanch the almonds & finely chop them. Keep them aside for later use. 3. In a small pan, heat 2tsp olive oil over medium heat. Add couscous and roast the same for 1-2 minutes till it is lightly roasted. Chocolate Walnut Oats Cake

While June is known to be the 'rains' season, it was a surprise to see a pleasant weather last week. The weather called for some baking☺ For a foodie like me, calories have never been an issue, but with everyone looking at guilt free options, I thought why not!  So the hero of my recipe is oats which I use instead of all purpose flour(Maida). Now with the recipe of my Chocolate Walnut Oats cake 🎂 Ingredients: Oats (powdered in a grinder) - 1 cup Castor Sugar - 1/2 cup Unsalted Butter/Canola Oil - 1/2 cup Eggs - 2 Baking powder - 1 tsp Cocoa powder - 3 tsp Vanilla extract - 1tsp Milk - 1/2 cup Walnuts - as per requirement Procedure: 1. Mix oats flour, baking powder & cocoa powder together in a bowl. Alternatively you can sieve the same to get better integration. 2. Whisk the eggs till they become fluffy & add vanilla extract. Adding the extract at this stage will take out the smell of the eggs. 3. Mix the unsalted butter
