What a week it was! Full of kitchen experiments ☺ Now that we are focusing on healthy food, our recipe today will be one healthy, nutritious & wholesome dish. Sharing my take on the Spice rubbed chicken with Couscous! Ingredients: Chicken breasts - cut into small pieces 500gm Couscous - 250 gm Garlic - 5 cloves finely chopped Spinach leaves - 15-16 Oregano - 1tsp Black pepper - 1tsp Salt - as per taste Lemon juice - 1 lemon Olive oil Almonds - 4-5 Recipe: 1. Sprinkle the chicken with oregano; season with salt & pepper. Coat well so that the seasoning is on all sides of chicken. Let it settle for 1/2 hour. 2. Blanch the almonds & finely chop them. Keep them aside for later use. 3. In a small pan, heat 2tsp olive oil over medium heat. Add couscous and roast the same for 1-2 minutes till it is lightly roasted. Make sure to stir it continously so that it does not get stuck to the pan. 4. Add 2 cups water & chopped garlic to the couscous. Add sal
